This is a fully washed coffee that is a mix of Bourbon, Typica & Caturra. This comes from the producer Wilson Gonzalez Ramos on the island of San Cristobal (Chatham Island) off the coast of Ecuador. This gorgeously complex coffee has a toffee-like sweetness with notes of pomegranate & stone fruits.

San Cristobal is the largest of the islands and is surrounded by the Humbolt current. The cold sea breeze and the latitude of the island create microclimates that make its flora and fauna exquisite. San Cristóbal (Chatham) is the easternmost island in the Galápagos archipelago, as well as one of the oldest geologically. It is administratively part of San Cristóbal Canton, Ecuador. Its Spanish (and official Ecuadorian) name “San Cristóbal” comes from the patron saint of seafarers, St. Christopher. English speakers increasingly use that name in preference to the traditional English name of Chatham Island, derived from William Pitt, 1st Earl of Chatham.

The coffee is grown in an ecological sanctuary and UNESCO "Patrimony and Humanity" site as a sustainable resource of the island's people. As a result of this, the law strictly prohibits the importation or use of fertilizer, herbicides, pesticides or any other chemicals. The coffee is cultivated on the volcanic mountains of the island, where the trees receive a perfect balance of sunlight, rain and altitude. The coffee trees were planted over 130 years ago and are still in production. After the berries are handpicked, the coffee is processed in an ecological wet plant using the island's unique spring water. The cherries then pass through a peeling process, where the highly sustainable workers choose the best cherries, recycling the rest for natural fertilizer.
